Tuesday, May 23, 2017, 8:30 PM - The May long weekend has passed, but there will be plenty more festivities kicking off this summer. There's nothing like celebrating warm temperatures and sunny skies with a cool drink.

We met with LCBO product consultant Dimi Pettigrew to discuss the hottest drink trends of 2016.

Sunny Sangria

Ingredients

1 lemon

1 orange

5 raspberries

1 oz lemon juice

1 oz simple syrup (make by boiling 1 cup sugar and 1 cup water)

3 oz white cranberry juice

Directions (pitcher size)

  1. To a large pitcher, add one lemon and one small orange, both thinly sliced and a cup of raspberries.
  2. Stir to bruise the raspberries slightly and top with 1/3 cup of freshly squeezed lemon juice, 3/4 cup simple syrup and 4 cups of white cranberry juice.
  3. Chill thoroughly for at least four hours to allow the flavours to steep and serve in a tall glass or large wine goblet over ice.

Storm Cloud

Ingredients

1 1/2 oz Captain Morgan Spice Rum, or Captain Morgan Dark Spiced Rum

1/8 fresh lime

Dash of Angostura Bitters

1 oz chilled coffee

4 oz ginger beer

Orange wedge

Directions (makes one cocktail)

  1. To a highball glass filled with ice, add rum, lime (squeeze and drop in), Angostura Bitters and coffee.
  2. Top with ginger beer.
  3. Garnish with an orange wedge.

Beach Party Mocktail

Ingredients

Ice cubes

5 oz pineapple juice

1/8 tsp fresh ginger

Freshly cut pineapple wedges

Directions (makes one cocktail)

  1. In a cocktail shaker filled with ice, add pineapple juice and ginger.
  2. Shake and strain into a tall glass with ice.
  3. Garnish with a pineapple spear.

The Garden

Ingredients

1/4 cup blackberries

1/4 cup blueberries

1 1/4 cups vodka

1 1/4 cups white grape juice

Directions (makes six drinks)

  1. In a pitcher, add berries and muddle with a muddler or the back of a wooden spoon.
  2. Pour in vodka and white grape juice. Stir.
  3. Pour into six glasses, spooning berries into each glass.
  4. Add ice to glasses and serve.

Pomegranate Mojito 0% Cocktail

Ingredients

4 lime wedges

1 tbsp superfine sugar

6-8 mint leaves

3 oz pomegranate juice

Club soda

Mint sprig

Directions (makes one drink)

  1. In the bottom of a highball glass, muddle together lime wedges, sugar and mint until sugar is dissolved.
  2. Fill glass with ice, add pomegranate juice and then top with soda.
  3. Garnish with a mint sprig.
