Mild winter means more of this delicious Canadian treat

With the recent warm up across parts of Canada, maple syrup producers are optimistic for the 2016 season.

The prime temperature pattern for maple syrup is cold nights and warm days and that's exactly what producers have been experiencing.

"So minus four or five at night, plus four or five in the day with some sun - that really gets the sap flowing and the long-range forecast looks great," Scott Deugo, syrup producer at Fulton's Pancake House and Sugar Bush in Pakenham, Ontario, told CBC.

Producers in Nova Scotia and New Brunswick have also tapped their trees earlier than they predicted this season due to mild conditions.

Fulton's located about 60 km west of Ottawa, just began taping their trees these past few days as daytime highs have just started to reach the zero-degree mark.

Meanwhile, staff at Proulx Sugar Bush and Berry Farm in Cumberland, Ontario are hoping chilly overnights last a little longer.

"We've been having some pretty good days so far. The sap has been flowing really well, because basically you need a good frost at night and a good defrost during the day," Proulx told CBC. "Once the frost is finished, then it gets too warm. The season is over."

So if you don't have plans for March Break, it may be a good time to head out to a sugar bush for some maple candy.
