The potato chip aisle has always emptied quickly when a storm is forecast in Atlantic Canada.
Covered Bridge Potato Chips decided to dig into the phenomenon in 2015 and brand its version of storm chips.
The potatoes come from a fourth-generation family farm in Carleton County, New Brunswick. It specializes in growing russet potatoes, whose longer shape makes them more likely to be used for French fries, not potato chips. They’re rich with higher-occurring sugars and lead to a fuller flavour.
The company had a setback last March when its potato chip factory burned down, but it received tremendous support and remained afloat with the help of copackers.
Now under the new leadership of Executive Vice President Brook Dickinson, Covered Bridge will soon be frying storm chips again in Woodstock, New Brunswick.
